What did you do?

A simple (and delicious) recipe to make with the kids.

You will need:

  • 1 x 397g tin of condensed milk
  • 450g white chocolate
  • your choice of food colours.

Instructions:

  1. Simply melt the chocolate and condensed milk in a saucepan (on a low to medium heat) until all melted and smooth.
  2. Then separate into 6 separate bowls (or however many colours you are doing) and mix in the food colouring until you get the desired colour.
  3. Line a 12cm square tin or food container with grease proof paper (ensuring this overlaps the edges for easy lifting out).
  4. Then begin to layer your fudge (make sure you smooth out each layer and try to keep it even).
  5. Place in the fridge for 1-2hrs to set.
  6. Remove from the fridge, cut and enjoy!

I opted for the gel food colours rather than liquid, I find these help keep the consistency of the fudge and gives a brighter colour.

Do you have any other projects planned?

Next we are going to try different flavour fudges and adding additional ingredients (I had previously made a candy cane fudge for Xmas which was delicious!)

I’m Vicky, a single mum of 3 children who are 9, 7 & 5 from Surrey, England. I work part time to fit around my children and enjoy baking and creating. My children usually like to challenge me with my cake making skills when requesting their birthday cakes!

How are you finding being housebound so far?

It’s been tough at times and we’ve definitely all had to adjust to the ups and downs of lockdown life. The home schooling seemed like a huge chore with 3 of them and felt like it was consuming my time, but we have settled into more of a routine that works for us. We are all missing our friends and family and normal life, but have been making the most of the time at home and doing things that we may not have had time to do otherwise.

Do you have any tips for other parents?

Find a routine that works for you, don’t worry about everyone else, the most important thing is you and your children being happy and doing the best you can. Use this as an opportunity to try new things or do things you wouldn’t normally have been able to.
