Antonia, from Fife, Scotland, shares her Fritattas recipe with us, yum!

What did you do?

Mini Fritattas are perfect for lunchboxes/picnics or even a savoury breakfast!

To make 8 mini Fritattas lightly whisk together 6 medium eggs with around 40ml of milk (we use soya but use whatever you fancy) and add your extras.

To these particular ones I added:
2 finely chopped Spring onions
2 finely chopped slices of ham
3 diced mini sweet peppers
40g of chive and onion double Gloucester cheese

Divide your mixture between 8 cupcake cases (I used silicone ones) and bake at 200 degrees for 25 minutes.

These were enjoyed by both my little one and Mummy and Daddy.

You could try any number of flavour combinations, how about trying cheese and tomato, sweet potato and feta or potato and onion?

Do you have any other projects planned?

I will be thinking up lots of ideas for things I can batch cook for lunchboxes when my little one goes back to nursery!

My name is Antonia, I moved to Scotland from England 5 years ago with my now husband and we have one little girl who is 15 months old. I am a nursery nurse by profession and will be returning to work shortly!

How are you finding being housebound so far?

‘lockdown’ has had its pros and cons for us. It has been lovely to have some extra time watching my little one grow and develop, learn words and take her first steps. However, being stuck at home with a toddler and not being able to attend our usual play groups and meet other mums has been difficult.

Do you have any tips for other parents?

Don’t put pressure on yourself. If you resort to too much screen time or too many take aways that’s fine! Nothing is forever…
