What did you make?
Beautiful fruit tarts for the whole family
Ingredients:
Ready rolled puff pastry
2tbsp caster sugar
Fruit of your choice, sliced
Apricot jam (for glaze)
For the pastry cream:
190ml milk
60ml cream
60g caster sugar
1 1/2 tbsp cornflour
3 egg yolks
4 tbsp of cold butter
1 tsp of vanilla extract
Method:
1. Bring the milk, cream and 30g of caster sugar to the boil on the stove and then remove from the heat.
2. Whisk the other 30g of caster sugar with the cornflour and egg yolks until combined.
3. Mix half of the mixture into the egg yolks by whisking continuously to stop the eggs from scrambling. Then add the other half and return to the heat.
4. Whisk continuously and allow to thicken.
5. Take off the heat and whisk in the butter and vanilla extract. Allow to cool.
6. While the pastry cream is cooling, cut the ready rolled puff pastry into rectangles, egg wash and sprinkle with caster sugar to sweeten the pastry. Blind bake with baking beans and baking paper inside for 15 minutes on 180c.
7. Once the pastry has cooked and cooked, pour the pastry cream on and allows to set in the fridge for 45 minutes.
8. Add the sliced fridge and return to the fridge for 1 hour. Then glaze the fruit with apricot jam and allow to set for abit longer.

My eldest misses school so much and it’s difficult know that my family have missed Wynter grow so much. However, it’s bought my little family closer together.
