What did you do?

Baking and icing biscuits has been a favourite activity over the last few months. It keeps my mind occupied, the kids’ hands busy and everyone likes having a supply of biscuits!

I use a basic biscuit recipe (275g of flour, 100g butter, 100g caster sugar, one medium egg and vanilla extract to taste. Heat oven to 190 degrees C and bake in small batches for around 8 minutes.

I then mix up icing sugar with gel colours and apply in layers. Use a thick mix (like toothpaste) to outline and a thinner mix to ‘flood’. I’ve used bags, bottles and brushes to apply icing- find what works for you. My eldest daughter really took to using the paintbrushes, my youngest likes using (and licking!) the spoons.

I like to take inspiration from others and then sketch out the biscuits before I start, tweaking designs. I also try to work out the order in which to apply the colours so I can get on with other things as the layers dry.

As the restrictions ease, we’ve been able to share them with friends and neighbours too.

We tried applying colour gel directly to some of the cookies without mixing it with icing sugar and it ran! Lesson learned for next time!

It’s been tricky juggling home working and home learning but it has been lovely to see my girls play and learn together.
