What did you do?
A great little recipe to get the little ones involved, let them stir the bowl & put the mixture into the muffin tin.
Don’t have leeks? Don’t worry-try a couple of chopped spring onions, chives or a little chopped red onion.
Ingredients (makes 7):
175g plain flour
1 tsp baking powder
1/4 tsp bicarbonate of soda
1 tsp sweet smoked paprika (normal paprika would work too)
2 eggs
100ml oil (Rapeseed/vegetable oil)
1 leek finely chopped
75g cheddar grated
1 tsp Dijon mustard
Method:
1) grease a 6 hole muffin tin (silicone one is great) and pre heat oven to 180C
2) sieve the flour into a bowl with the baking powder, bicarbonate and paprika.
3) in a separate bowl/jug beat 2 eggs with the oil, and mustard.
4) stir the wet ingredients into the dry and add the leeks and cheddar. Pop into your muffin tin & bake for 25 minutes.
Take off any crispy top bits before giving to babies, I find Flo struggles with those a bit. (Just have the top bit for yourself !)
These worked really well alongside soup as a great alternative to bread! Or a great snack idea.
