What did you make?
We made bunny and pig cupcakes!
RECIPE:
125GR SOFTENED UNSALTED BUTTER
1/2 CUP MAPLE SYRUP
1 TSP VANILLA EXTRACT
2 LARGE EGGS
2 CUPS PLAIN FLOUR
1TSP BAKING POWDER
1/2 CUP ALMOND MILK
TOPPING:
FOR THE BUNNIES:
1/4 CUP WHITE CHOCOLATE CHIPS
2TSP COCONUT OIL
SHREDDED OR DESICCATED COCONUT
FOR THE PIGS:
BOUGHT STRAWBERRY FROSTING
DECORATIONS:
SMALL PINK AND WHITE MARSHMALLOWS
24 CANDY EYES
METHOD:
1. PREHEAT OVEN TO 160C FAN FORCED.
2. BEAT BUTTER, MAPLE SYRUP AND VANILLA IN STAND MIXER UNTIL PALE AND FLUFFY.
3. ADD EGGS, ONE AT A TIME.
4. WHISK TOGETHER FLOUR AND BAKING POWDER AND ADD HALF OF IT IN THE BUTTER AND EGG MIXTURE.
5. ADD THE MILK IN THE MIXTURE AND THEN CONTINUE WITH THE REMAINING FLOUR MIXTURE.
6. DIVIDE BUTTER IN 12 LINED CUPCAKE CASES. BAKE FOR 20 MIN AND TRANFER TO A COOLING RACK TO COOL COMPLETELY.
7 . WHEN CUPCAKES ARE COMPLETELY COOL START DECORATING.
8. FOR BUNNIES, MELT THE CHOCOLATE AND COCONUT OIL IN MICROWAVE FIRST FOR 1 MIN, AND THEN FOR 30SEC INTERVALS. DIP THE CUPCAKE IN THE MELTED CHOCOLATE AND THEN IN THE COCONUT. ADD THE DECORATIONS TO MAKE BUNNIES. I CUT THE PINK MARSHMALLOWS DIAGONALLY TO MAKE THE EARS.
9. FOR THE PIGS, SPREAD THE STRAWBERRY FROSTING ON COOL CUPCAKES AND THEN ADD THE DECORATIONS. I CUT THE MARSHMALLOWS IN HALF FOR THE EARS AND NOSE.
MY KIDS LOVE BAKING SO THEY ALWAYS PARTICIPATE IN THE MAKING PROCESS AS WELL AS THE DECORATION. THIS IS SUCH A FUN ACTIVITY TO DO WITH THE KIDS AT HOME. THEY LOVE MAKING THE FACES FOR THE ANIMALS AND GIVING THEM NAMES.

Do you have any tips for other parents?
Always think the night before what activity to do with the kids the following day. Being prepared is what helped us the most. There should also be a plan for every day. Kids love following schedules.
What are your family’s favourite board game(s)/card game(s)?
My 4yo loves snap and my 2yo loves the cube colour activities game.
What are your children’s favourite books?
My 4yo loves everything about super heroes so his favourite at the moment is a Marvel series of book that has 3 levels of reading.
My 2yo is obsessed with the Room on the Broom and The Pig the Pug book series.
What toys would you recommend to other parents?
Wooden blocks, duplo, lego, magnetic tiles, and puzzles
