Ash, from East London, sent in this great BBQ Peri Peri chicken recipe. I’m hungrier already!
Recipe Ingredients
- 3 tbl spn Plain Yoghurt
- Juice of 1 lemon
- 1 tblspn oil
- generous splash of good vinegar
- 3 cloves garlic
- 2 medium red chillies
- ½ tspn chilli powder
- ½ tspn trumeric
- ½ tspn ginger powder
- ½ tspn garlic powder
- ½ tspn thyme
- ½ tspn parsley.
- Oregano, salt and black pepper to season
Method
Start with your garlic and chillies in a pestle and mortar. It’s really ok if you do not have a pestle and mortar you can use a food processor too.
In a bowl add your yoghurt and all your dried herbs and spices and give that a good mix, now add your crushed garlic and chillies along with the rest of your ingredients (vinegar, oil, lemon juice) and mix well.
With your chicken (or meat of your choice), score it lightly (that means adding shallow slits to the flesh). Add your marinade to your chicken. If you can, its best to let it marinate for at least a couple of hours. Make sure your chicken is covered well with the marinade.
Make sure your oven is preheated to 180 degrees (you can cook this on the BBQ too btw) cook for about 1 hour (if it’s a small chicken) times will depend on how big your chicken is. If it’s a medium sixed then it will need at least 1 hour and 20 minutes.
Every 15 minutes take it out (close your oven door immediately to keep the heat in) and baste the chicken using the juices already in the pan.
If you do this a few times, you will have super lovely crispy skin.
I know there’s a lot of Nandos lovers out there who are really missing their Peri-Peri chicken, so here’s a little treat for you! Please do not worry if you don’t have all the spices and herbs. The brilliant thing about this recipe is, you can use whatever is in your cupboard!!
The great thing about most of my recipes is they are very versatile, you can use however much you want and chop and change where you please. Make it to your taste, have fun with it and go crazy.

I actually want to get healthier, so i am recipe testing some healthy but tasty recipes. I want to bulk up food with Veggies as much as i can and minimise my meat intake. however, i do believe in balance, so I will make sure there is still a really good mixture of recipes on my page.

I’m Ash and i live in East London, growing up in an Asian household i started to learn how to cook quite young and my mum is an absolutely amazing cook. she often gets called upon by friends and neighbours to help and advise them with cooking. I’ve always loved food and loved creating. if the mood takes me i’ll happily cook a roast for one 🙂
I remember watching Ready Steady Cook and Masterchef as a youngster and being fascinated by it. I spent my 20’s living in Dublin and New York City, where i was introduced to so many different kind of foods. also the last 10 years i have travelled to so many places, i’ve been to Mexico, Brazil, Jamaica, France, Egypt, Vietnam and Thailand to name a few, so my travels really influence my food tastes. I don’t have children, however, i have a LOT of nieces and nephews and plenty of friends with kids too.
